Cornbread Taco Casserole

Well guys, it was Taco Tuesday in the Rivera household tonight. We try to do theme nights, but sometimes we just don't have the time to think through a recipe. But when it comes to Taco Tuesday we ALWAYS make sure we have some kind of taco dish. I started making this dish a few years ago and I know the whole family loves it, even the kid! It's not exactly a healthy dish, but it sure is an easy weeknight meal, and with minimal ingredients, you can whip up this dish in about a half hour! You can't beat that!

Obviously the first thing you want to do is gather all your ingredients. As always, you don't want to be stuck without an ingredient

Not only is this cornbread an easy shortcut, but it's cheap! Like $0.47 cheap at Aldi!

Start preparing according to box directions

But first, pre-heat your oven to 400 degrees

In a mixing bowl, pour out the cornbread mix and add the egg and milk

Mix together, the mixture will be a little lumpy, but that's okay!

Line a square baking dish with wax paper. 

Pour in the cornbread batter. 

(I wound up having to cut off the excess wax paper, so it's not the worst idea to size the paper to the pan, I used an 8" by 8") Bake at 400 degrees for 20 minutes.

Chop those onions!

Saute 'em with a little salt...

And a little pepper too... for about 5 minutes, until onions are translucent.

Toss in your ground beef and brown.

Drain most of the fat. You can leave a little for the flavor, I'm guilty of it (chuckle chuckle)

So this part you can add your package of taco seasoning. Every now and then I'll make a batch of my own, but this one is only $0.29 at Aldi and it is an easy and cheap time saver. (Don't judge)

Add in your water

Bring to a boil and simmer for 3-4 minutes, until the sauce thickens.

Prep all your desired fixings. These are my family's personal favorites. Yum to all the freshness in this picture!

At the 20 minute mark of cooking the cornbread, top with 2 cups shredded cheese. We use Colby and Monterey Jack, but you can use whatever kind you like.

Pour on the meat!

I probably should have done that before the cheese, but it still works just as well!

Add all your fixings!

And Voila! What a beautiful picture, if I do say so myself!

Sheet Pan Sausage, Peppers, & Onion Sandwiches

Does anyone else out there love their sheet pans? Because I do! Sheet pan meals are literally the best idea anyone has ever had, like ever! I wish I could shake the hand of whatever genius came up with such a spectacular idea. Anyway, getting off track. Tonight is all about the sheet pan. I have been awfully tired today, so when dinner time started rolling around I needed to fix up something quick and easy. Enter the sheet pan. I grabbed a few things out of the pantry and out of the fridge, and before I knew it, dinner was ready. Let me break it down for you. This is one of my very easy recipes because you only need 5 ingredients (not including the spices) to make this. Slice the peppers and onions into strips and chop the garlic. This is where I like to take off that synthetic casing off the sausage. I don't know about you, but I think it's icky and kinda gross, plus anything synthetic should not be ingested anyway!
