Sheet Pan Sausage, Peppers, & Onion Sandwiches

Does anyone else out there love their sheet pans? Because I do! Sheet pan meals are literally the best idea anyone has ever had, like ever! I wish I could shake the hand of whatever genius came up with such a spectacular idea. Anyway, getting off track. Tonight is all about the sheet pan. I have been awfully tired today, so when dinner time started rolling around I needed to fix up something quick and easy. Enter the sheet pan. I grabbed a few things out of the pantry and out of the fridge, and before I knew it, dinner was ready. Let me break it down for you. This is one of my very easy recipes because you only need 5 ingredients (not including the spices) to make this. Slice the peppers and onions into strips and chop the garlic. This is where I like to take off that synthetic casing off the sausage. I don't know about you, but I think it's icky and kinda gross, plus anything synthetic should not be ingested anyway! Cornbread Taco Casserole Well guys, it was Taco Tuesday in the Rivera household tonight. We try to do theme nights, but sometimes we just don't have the time to think through a recipe. But when it comes to Taco Tuesday we ALWAYS make sure we have some kind of taco dish. I started making this dish a few years ago and I know the whole family loves it, even the kid! It's not exactly a healthy dish, but it sure is an easy weeknight meal, and with minimal ingredients, you can whip up this dish in about a half hour! You can't beat that! Lasagna Roll Ups - Freezer Friendly

Lasagna Roll-ups Being a working mom means you need some shortcuts in life. If I don't prep at least three or four freezer meals a week, I feel totally lost. Freezer meals are a life saver when you need to get dinner on the table quick, (and when you really really don't feel like cooking). This is one of my tried and true freezer recipes and I hope you and your family like it as much as we do. I tried my best to get all the ingredients together first, which makes life a whole lot easier. Seriously whenever you are making a recipe like this read ALL the ingredients and directions before you start. I've made the mistake (and still do sometimes) to start a recipe and not read the whole thing first. Then, of course, I'm missing a key ingredient.  Boil your lasagna noodles for 8 minutes.
